Hi All……I know it is really difficult to adjust to the chilly days we are having right now but looking beyond the curtain of rain at the little green shoots, and the buds on the lemon trees, will bring a smile to your face….new life always does!! SO, let us celebrate the start of SPRING with……

 

A COLOURFUL COLLECTION…. ANTIOXIDANTS !

 

The rainbow colours of fruit and veg make them ever so tempting and, as it turns out, there are sound scientific reports behind the colour and health link.

The colours come from a variety of chemicals called ANTIOXIDANTS. These chemicals are almost exclusively found in plants. Electrons are the medium of energy transfer between molecules – and they are essential – but when these electrons stray, they also create free radicals which can be harmful. Uncontrolled free radicals cause aging, arthritis, cancer and hardening of the arteries. To combat this harm we need ANTIOXIDANT ‘shields’ which our bodies cannot make, but plants can. Here is where God’s awesome work comes into play….. in nature all plants make ANTIOXIDANT shields against free radicals and these shields give plants beautiful, appetising colours which, in turn, attract us to eat them, thereby borrowing their shields for our own health!!

Vitamin C, Vitamin E, lots of different Carotenoids are ANTIOXIDANTS – it is beneficial to take these as supplements but even more essential to eat them as whole foods as a variety of vitamins and minerals need to work synergistically in order to be optimally absorbed – all nutrients need to work “in concert” within our body.

The message therefore is…. eat as many whole fruit and veggies as you can and take plant-based supplements rather than chemically or pharmaceutically-based vitamins and minerals. Also, I believe that going for quality rather than quantity is best when it comes to choosing your vitamins, even though they might seem more expensive – even half a dose of the vitamins and minerals that are of a superior quality will be of greater benefit than a full dose of the “cheaper” ones. LENTIL SOUP

Serves 4

Ingredients:

1 onion, finely chopped
4 cloves garlic crushed
1-3 chillies (optional)

1 1teaspoon Thai seven spice powder (optional)
100g red lentils
2 sticks of celery
2 carrots
2 tablespoons of tomato puree

1 can of RED KIDNEY BEANS (or any other type of beans)
1lt water
1heaped teaspoon stock powder (the reduced salt version is better)

Method:

Fry onions in a little coconut oil, add garlic, chillies, spice & lentils and cook for a few minutes.

Add rest of ingredients and simmer till soft

Serve whole or blend till smooth, adding a little Himalayan salt or Herbamare + Black Pepper plus a dollop of fat free yoghurt.

Sprinkle with freshly chopped parsley or dhania.
